Rice Paper Egg Cheese Fold (Printable Version)

Golden rice paper pouch with egg, scallions, and melted cheese, perfect for a quick snack or light breakfast.

# What You'll Need:

→ Main

01 - 2 large rice paper wrappers
02 - 2 large eggs
03 - 1/3 cup shredded cheese (cheddar, mozzarella, or preferred variety)
04 - 2 scallions, finely sliced
05 - 1 tablespoon vegetable oil

→ Seasoning

06 - Pinch of salt
07 - Pinch of black pepper
08 - Optional: chili flakes or sriracha, to taste

# Steps:

01 - Fill a shallow dish with warm water and submerge one rice paper wrapper for 10 to 15 seconds until pliable. Place on a clean, damp kitchen towel or board.
02 - In a small bowl, beat one egg with a pinch of salt and black pepper until combined.
03 - Warm half a tablespoon of vegetable oil in a nonstick skillet over medium heat.
04 - Pour the beaten egg onto the center of the softened rice paper. Sprinkle half the sliced scallions and half the shredded cheese evenly over the egg.
05 - Fold the sides of the rice paper over the filling to create a square or rectangular pouch.
06 - Transfer the pouch seam-side down to the skillet. Cook for 2 to 3 minutes until golden and crisp, then flip and cook the other side for 2 minutes.
07 - Repeat the soaking, filling, folding, and cooking steps with the remaining rice paper, egg, scallions, and cheese.
08 - Serve immediately while hot, optionally drizzled with sriracha or sprinkled with chili flakes.

# Expert Advice:

01 -
  • Ready in 13 minutes flat, perfect when you're hungry but not committed to a full breakfast.
  • That crispy rice paper exterior contrasts beautifully with the soft, melted cheese and egg inside.
  • Completely customizable with whatever vegetables or proteins you have on hand.
02 -
  • Don't oversoak the rice paper—it will tear or dissolve. Fifteen seconds in warm water is genuinely enough.
  • Cook on medium heat, not high. High heat will burn the rice paper before the egg cooks through.
  • Fold your pouch while the rice paper is still slightly warm, or it becomes brittle and hard to work with.
03 -
  • If your rice paper wrapper tears during soaking, start fresh with a new one—trying to patch it is more trouble than it's worth.
  • Use a nonstick skillet without hesitation. This recipe absolutely needs it because the rice paper sticks easily if your pan isn't well-seasoned or if you're not using nonstick.
