01 - 24 large Medjool dates, pitted

02 - 4 oz goat cheese, softened
03 - 1 tbsp fresh chives, finely chopped (optional)
04 - Freshly ground black pepper, to taste

→ Bacon

05 - 12 slices thin-cut bacon, halved crosswise (24 pieces)

→ Optional Garnish

06 - 2 tbsp honey, for drizzling
07 - 1 tbsp chopped pistachios or fresh parsley

# Steps:

01 - Preheat the oven to 400°F and line a baking sheet with parchment paper or foil. Set a wire rack on top if available.
02 - In a small bowl, combine goat cheese, chopped chives, and freshly ground black pepper until smooth.
03 - Carefully open each pitted date and fill with approximately 1 teaspoon of the cheese mixture. Press closed gently.
04 - Wrap each stuffed date with half a slice of bacon, securing the end underneath or with a toothpick if necessary.
05 - Place the wrapped dates seam-side down on the prepared wire rack or baking sheet. Bake for 18 to 22 minutes, turning once halfway, until bacon is crisp and golden.
06 - Remove from oven and allow to cool for 5 minutes. Drizzle with honey and sprinkle with chopped pistachios or parsley if desired.
